What comes to mind when you think of Saint Patrick’s Day?

Wearing green, getting pinched and of course Corned Beef and Cabbage. It is a global celebration on March 17th, celebrating Irish Culture with parades, special foods, shamrocks and a whole lot of green.

Corn Beef and Cabbage

1 (4-pound) corned beef brisket with spice packet

4 large carrots, peeled and cut into pieces

10 baby red potatoes cut into pieces

1 onion peeled and cut into pieces

6 ounce can of beer, optional (can use non-alcoholic beer)

1 head of cabbage quartered

Rub the corned beef with the ingredients of the spice packet that comes with the corned beef. Place corned beef in a large pan or crock pot and cover with water and the 6-oz. can of beer. Cook for 50 minutes per pound or until fork tender. Add the carrots, potatoes, onion the last hour of cooking. Add the cabbage the last 45 minutes. Serve with spicy mustard. Delicious!

White Chocolate Brownie Bites

1 (20 ounce) box brownie mix

1 cup white chocolate chips

1 cup powdered sugar

Mix your favorite brownie mix according to package directions. Spread half of the brownie batter into a greased 8 x 8-inch pan. Sprinkle white chocolate chips on top of batter half, and top with remaining brownie mixture. Bake as directed on box. Cool. Sprinkle with ½ to 1 cup powdered sugar and cut into squares.

St. Patty’s Green Grits Pie

¾ cup water

1/8 teaspoon salt

¼ cups grits, (not instant quick cooking grits)

½ cup butter

green food coloring

¾ cup sugar

2 tablespoon all-purpose flour

3 large eggs, lightly beaten

¼ cup buttermilk

1 cup whipped cream, sweetened with 1 tablespoon confectioner’s sugar and colored with 1 drop of green food coloring

1 teaspoon vanilla extract

1 (9-inch) refrigerated or frozen and thawed, unbaked pie crust

In a small saucepan, bring ¾ cup water and the salt to a boil. Add the grits, reduce the heat, cover and cook over low heat for 5 minutes, stirring several times, unit the grits are very thick. Add the butter and 1 drop of food coloring and stir until the butter melts. Set the grits aside and allow them to cool slightly. In a small bowl, stir together the sugar, flour, eggs, buttermilk and vanilla and stir into the cooled grits. Pour the mixture into the pie crust. Bake at 350 degrees for 35 to 40 minutes, until set. Serve warm or cold with whipped cream and garnish with strawberries.
